Coalescence dynamics in oil-in-water emulsions at elevated temperatures

Abstract Emulsion stability in a flow field is an extremely important issue relevant for many daily-life applications such as separation processes, food manufacturing, oil recovery etc. Microfluidic studies can provide micro-scale insight of the emulsion behavior but have primarily focussed on droplet breakup rather than coalescence. The crucial impact certain conditions increased pressure or elevated temperature frequently used industrial processes completely overlooked studies. In this work, we investigate coalescence flowing oil-in-water emulsions subjected to higher room temperatures namely between 20 70 $$^{\circ }$$ ? C. We use specifically designed lab-on-a-chip application purpose. Coalescence frequency observed increase with increasing temperature. associate observation change viscosity at triggering stronger perturbation thin aqueous film separating droplets. Using scaling law rupture time film, establish mechanism leading temperatures.
